National Egg Day - Nutritious and Healthy Alternatives to Eggs

National Egg Day is an excellent opportunity to talk about some fantastic and nutritious alternatives to eggs.

Eggs have been a staple in the human diet for centuries, but as we learn more and more about nutrition, we realize that they are not the perfect food we once thought they were.

There are many healthy and delicious alternatives to eggs that can provide us with the nutrients and health benefits that we need.

And no, you don't have to be a vegan to enjoy eggless muffins.

We know eggs are a great source of protein, inexpensive, and easy to cook.

I used to eat them daily. Hard-boiled. Scrambled. Every which way imaginable.

And then I watched the documentary, Dominion.

I was sickened at the cruelty and standardized production of chickens. Electrocution and shredding of non-producing male chicks horrified me, and I couldn't justify eating something that led to such misery.

I decided I could not eat embryos and babies any longer. 

I gave up eggs.

It was hard at first. I love baking but found making many of my favorite recipes without eggs challenging. But I found substitutes, and now I don't miss them.

Perhaps you're simply trying to improve your health. Whatever your reason, it's possible to give up eggs without compromising your favorite recipes or meals.

Alternatives to Eggs

Eggs are not essential but a common ingredient in many recipes, and there are plenty of delicious recipes out there that don't use eggs. And with a bit of creativity and experimentation, you can adapt almost any recipe to be egg-free.

If you're cutting eggs out of your diet, some of the most popular substitutes for eggs include tofu, tempeh, chia seeds, flaxseeds, and bananas.

Tofu and tempeh are both excellent sources of protein and are very versatile. You can use them in place of eggs in many recipes, such as scrambles, omelets, and quiches.

Chia seeds and flaxseeds are also excellent sources of protein and fiber, and you can use them to make a delicious egg-free breakfast porridge.

A fave alternative to eggs is to soak 1 tablespoon of flaxseed meal with 2 1/2 tablespoons of water - let that sit and thicken to a gel for about 5 - 10 minutes. If your recipe calls for 2 eggs, double that recipe.

Bananas are a great source of potassium and natural sweetness, and you can use them to make egg-free pancakes or waffles.

You can find an egg substitute that works for any recipe. And who knows? You might even find that you like your egg-free versions better than the hand-written recipes from grandma.
