Vegan Holiday Treats
Do you love baking and want to try something new this holiday season?
You're in luck.
I have a great selection of healthy vegan Christmas desserts that are sure to become your family's favorite. They're easy, delicious, and, best of all, don't contain any dairy or animal products. Whether you follow a vegan lifestyle or not, everyone will love these treats.
One of my favorites is this recipe for no-bake peanut butter balls. The kids like to call them Nutter-Balls, hubby likes to call them deer turds {sorry}. Either way, the kids have fun making them. They're perfect for snacking on while you watch your favorite holiday movie, and your kids can help too.
INGREDIENTS
1/2 cup natural peanut butter – (with no added oil, no added sugar, like MaraNatha Organic Peanut Butter).
1/4 cup Maple syrup – or agave syrup.
1 tsp. melted coconut oil – Vegetable oils wouldn't work in raw vegan desserts.
3/4 cup almond flour – or oat flour for a nut-free option.
2 tbsp. coconut flour
1 tsp. vanilla extract
1 cup vegan chocolate chips – dark chocolate chips or vegan milk chocolate chips; choose your favorite option.
1 tbsp. coconut oil
Combine wet ingredients: peanut butter, maple syrup, coconut oil, and vanilla extract. Then add and blend almond flour and coconut flour. Scoop out 2 tbsp size of mixture and roll into a ball. Lay on parchment paper to freeze for approx. 15 minutes.
Melt chocolate chips with coconut oil for topping. Spear the frozen Nutter-Balls with a toothpick to dip into melted chocolate. Then refreeze 5 more minutes to firm up the chocolate.
It's easy to make and delicious!

INGREDIENTS
1 1/4 cup almond (or oat) flour
1/2 tsp baking soda
1/2 tsp salt
1 tsp cornstarch
1/2 cup vegan butter
1/2 cup brown sugar
1/4 cup sugar
1 tbsp nondairy milk suggest almond or soy
1 tsp vanilla
3/4 cup vegan mini chocolate chips
Combine dry ingredients in one bowl and wet ingredients in a separate bowl. Add dry mixture to wet ingredients a cup at a time. When thoroughly mixed, fold in chocolate chips. Scoop out a teaspoon of dough onto a baking sheet. Bake at 350° for 7-9 minutes.
