Root Veggies & Exotic Fruits - December
Winter is the perfect time to explore new recipes that incorporate root vegetables and exotic fruits. Root veggies, such as sweet potatoes and parsnips, are hearty and full of vitamins and minerals. Exotic fruits like mangoes and Jackfruit can be a refreshing addition to your juicing recipes.
Maybe it's just me, but I get excited walking through the fresh produce section of my grocer. It is a colorful experience. With all the different fruits and vegetables on display, it can be hard to resist buying something new.
What are some root vegetables and exotic fruits?
Root vegetables are a great way to get your daily dose of vitamins and minerals. My favorite organic root vegetables are carrots, sweet potatoes, beets, and celery.
Purple Potatoes protect against heart disease and cancers while promoting healthy skin and eyesight. Sweet potatoes are a great source of beta-carotene and antioxidants. Parsnips packed with vitamins A and C and calcium and iron will help keep you healthy all winter long.
If you're looking for a new way to enjoy your root veggies, try roasting them in the oven. Preheat your oven to 400 degrees and chop up your favorite vegetables into small pieces. Toss them with olive oil, sea salt, and black pepper. Spread them out on a baking sheet and roast for 20 minutes.
What fruits can you eat as a vegan?
Exotic fruits such as Jackfruit and mangoes are also healthy snack options. Jackfruit is high in fiber and vitamin B6, and you can use it as a meat replacement for a healthy vegan lifestyle. At the same time, mangos and dragon fruit are excellent sources of carotenoids - such as beta-carotene and lycopene. These carotenoids can lower your risk for heart disease and cancers.
Root veggies and fruit can add new flavors to your juice therapy. Exotic fruits are sometimes hard to come by in the United States, but you can find them in many large grocery stores. The antioxidants and Vitamin C found in these fruits give you more reason to add them to your next energizing and natural healing juice therapy recipe.
